Stir-fried Chinese noodles and prawn

Ingredients
600g large prawns
250g Chinese noodles
500g broccoli
2 small courgettes
4 carrots
4 tbsp. olive, sesame or groundnut oil
40g fresh ginger
1 tbsp. curry powder
50g salted peanuts
Salt and pepper
Method
Cut the carrots and courgettes into matchsticks. Boil the
broccoli for five minutes until tender. Meanwhile, cook the noodles
following the instructions on the packet. Peel and finely grate the
ginger. Peel the prawns. Heat the oil in a large frying pan or wok
and fry the ginger and all the vegetables except the broccoli for
approximately 5 mins. on a high flame. Add the broccoli, curry
powder and noodles. Season and mix well. Add the prawns, cover and
cook for a further 5 mins. Sprinkle with crushed peanuts and
serve.
